I’m excited to kick this 12 Days of Christmas series off with some sweet treats because, well, who doesn’t love a cookie??
Last year my 11-year-old daughter, Avery, decided she wanted to create her very own cookie recipe. Not exactly knowing where to start, she came to me for the basic ingredients. I gave her a chocolate chip cookie recipe and told her which ingredients were essential and which ones she could substitute or remove to make a recipe of her very own. THIS is what she came up with…
Chocomint Chip Delights
2 1/2 cups flour
4 teaspoons pure cocoa powder for baking
2 teaspoons baking soda
1 teaspoon salt
1 cup white sugar
1 cup brown sugar (lightly packed)
1 1/4 teaspoon peppermint extract
1 cup (2 sticks) softened butter
3/4 cup semi-sweet chocolate chips
3/4 cup white chocolate chips
Preheat oven to 350 degrees. Combine the first four ingredients in a small bowl. In a larger bowl beat the butter, eggs, peppermint extract, and both the white and brown sugars. Add the dry ingredients into the larger bowl with the butter/sugar mixture and mix well. This may need to be done by hand if the butter is not soft enough. Once the cookie dough has been thoroughly combined, add in the white and semi-sweet chips. Drop small rounded spoonfuls onto a baking sheet lined with parchment paper and bake for 10-12 minutes or until golden brown. Cool on rack for a few minutes then move them to an airtight container while still a bit warm to keep them nice and chewy!
